Zero Waste Chef: From Scratch Pizza
If you’re anything like me, cooking a meal can be daunting; especially while trying to lower your food waste production. I would often become frustrated trying to accomplish zero-waste cooking, but found that it is not only possible but absolutely enjoyable to do. To make it one step easier for you, I have added my favorite go-to zero-waste recipe from the Zero Waste Chef. This ricotta and veggie-style pizza only requires six steps, but is more advantageous for those with a little extra time on their hands. Good luck!
- Make your ricotta. Gather: whole milk, lemon, and salt. Heat the whole milk up on a stove until it is about to boil. Add lemon juice and a sprinkle of salt. Wait for curds to drop to the bottom of the pan, then strain over cloth. Transfer to a glass jar and store it in the refrigerator.
- Make your dough. Gather: dry yeast, sugar, water, white flour, salt, and olive oil. Add sugar and yeast to warm water; let sit until it begins to bubble. Combine the dry ingredients and knead the dough. Put in a glass bowl and cover with a towel. Let sit for 1-2 hours.
- Make your sauce. Gather: salt, minced garlic, olive oil, dried basil, dried oregano, and chopped tomatoes (I like roasted for more flavor). Heat your olive oil and garlic in a pot until fragrant, then add the remaining ingredients. As the tomatoes heat up, make sure to squish them into a mash. Stir consistently until thick, then puree.
- Preheat the oven to 375 degrees. After letting it sit, return to your dough, split it in half and roll out one circular pizza crust. Put it in the oven for no more than 5 minutes.
- After it has pre-cooked, add the sauce, ricotta, and any other veggies your heart desires (I love olives and spinach).
- Bake! Leave your pizza in the oven for 6-7 minutes and enjoy!
Waste:
-lemon peel (compost)
-whey/water drained from ricotta (store in glass jar and use for future cooking/baking or use for pizza dough)
-all produce purchased without packaging and brought home in reusable grocery bag
